
It's almost spring and I decided to celebrate the date by making springy cupcakes.

Red velvet cupcakes with a cream cheese frosting. On top of that sits a shredded wheat and coconut nest. Sitting in the nest is a trio of chocolate candy eggs.

Okay Mother Nature, we're now officially ready for spring. Bring it on. Please.

Couldn't it be a shredded coconut nest? I mean I know Canada has a lot of wheat and not so much coconut, but...
I mean all coconut--and maybe some almond slivers and chocolate? Hey, I've been at war with LARD! so long all I can do is dream.
