Rainbow Trout on the Barbie
I love summer eating, especially since we started barbecuing whole fish in a special fish cage thingie. And I'm learning to fillet a fish a bit better too, this time a rainbow trout with very few bones left. The side was a veggie coucous dish which was yummy and made enough for eating all week. Recipe for that in tomorrow's post.

Oh that looks so good. I used to have one of those cage things when I fished in the Sierra Mountains of California for trout and kokanee, I would cook the trout whole with the head on stuff with sliced lemons and wrapped with hickory smoked bacon to keep them from falling apart. your trout looks so good with the pink flesh, nothing better than trout from mountain streams or lakes in cold water.
