My friend Wendy sent me this recipe for almond cookies. They're great for Passover or Easter or really, anytime of year. They are so easy and really delicious.
Swish the following ingredients together with a fork:
2 egg whites
1/2 cup sugar
1 tsp vanilla
Stir in:
3 cups sliced almonds
Toss all ingredients together and drop by spoonful on parchment lined cookie sheets. Bake in a 350 degree oven for 12-15 minutes. Turn off oven and leave cookies in with the door open until cool.
Enjoy!

ReplyDeleteThey are fab, Elisabeth! Give 'em a try. Not content to leave well enough alone, I took half of them and dipped them in one square melted dark chocolate (Scharffenberger 70%)... for variety's sake (and because Barry says cookies aren't cookies unless they are chocolate cookies)...

ReplyDeleteWOW! Who would of thought to dip half of the cookie in chocolate? I seem to recall Lila dipping her rice krispie squares in chocolate and also adding peanut butter...
